Producer Background
Café Granja La Esperanza (CGLE) is one of Colombia's most influential specialty coffee producers and a global leader in the cultivation of rare cultivars and precision coffee production. Owned by the Herrera family, CGLE has spent decades refining farming, processing, and quality control across its collection of farms in Valle del Cauca.
Their coffees have become fixtures in international Brewers Cup and Barista Championship competitions, earning a reputation for exceptional consistency, scientific cultivation, and uncompromising quality.
Las Margaritas is one of CGLE's flagship farms, producing some of the estate's finest Gesha, Sudan Rumé, Sidra, Laurina, Mandela, and other rare cultivars.

About the Process
Washed
Only perfectly ripe cherries are selected before flotation removes lower-density fruit. The cherries undergo approximately 18 hours of open-tank fermentation, followed by depulping and a further 24 hours of aerobic fermentation.
After fermentation, the remaining mucilage is carefully washed away before the coffee is dried in mechanically controlled drying silos for 3–5 days at approximately 38°C. The coffee then rests in climate-controlled storage maintained between 18–19°C to stabilize moisture and preserve cup quality.
This carefully managed washed process enhances sweetness and complexity while maintaining exceptional clarity, allowing the Gesha cultivar to remain the focal point of the cup.

Las Margaritas is located near Caicedonia in Colombia's Valle del Cauca, where the combination of elevation and climate creates ideal conditions for producing exceptional coffee.
